Nut Corners

Ingredients

150g whole wheat flour/ spelt flour
½ tsp. baking powder
60g sugar
1 tbsp. vanilla sugar (or 5 drops vanilla essence)
1 egg
65g butter/ margarine

Topping:

75g apricot jam or marmalade
100g butter/margarine
100g sugar
1 tbsp. vanilla sugar (or 5 drops vanilla essence)
2 tbsp. water
100g ground hazelnuts
100g chopped hazelnuts

For Brushing:

Chocolate

Preparation

  1. Pre-heat oven to 190°C or (160°C fan oven)
  2. Make a smooth dough from first lot of ingredients with a dough hook.
  3. Roll dough out on a baking tray lined with parchment and brush with apricot jam.
  4. In a pot melt butter, sugar, vanilla sugar, and water and bring to the boil while stirring.
  5. Stir in the nuts and leave to cool a little. Then spread the mix onto the apricot jam layer.
  6. Bake in the oven for 20-30 minutes. Leave to cool and brush with melted chocolate.
