Cinnamon Stars


3 large egg whites at room temperature.
1 tbsp. vanilla sugar
150g icing sugar
1 pinch salt
500g ground almonds
3 tsp. cinnamon powder
1 tsp. lemon juice


  1. Pre-heat the Oven to 125° c (100°C fan oven)
  2. Whisk the egg whites, vanilla sugar, 50g of the icing sugar and salt in metal bowl which is placed over a warm water bath until soft peaks are formed. Then whisk until cold.
  3. Put aside 100g whisked egg whites in refrigerator.
  4. Cover baking tray with parchment.
  5. Mix the rest of the icing sugar with 400g almonds and cinnamon and then work the mix into the whisked egg whites so that it is possible to shape the dough but the dough is still moist.
  6. Roll out the dough ½ cm thick and cut out stars with a cutter and place the stars on the baking parchment. Put a dab of egg whites from the fridge on each star. Keep rolling out the dough and cutting out stars until all the dough is used up.
  7. Bake each tray of stars for 25-30 minutes.
  8. Leave to cool on a wire rack.
