Chocolate Cake in Ramekins


100g Chocolate
3 tbsp. Cream
100g Butter
3 Eggs
100g sugar
200g Ground Almonds

Oil for greasing ramekins

Coco powder for dusting ramekins


  1. Grease ramekins with oil and dust with cocoa powder.
  2. Pre-heat oven to 160° C (140°C fan oven).
  3. Break chocolate into small pieces, place cream into a saucepan and heat a little until warm. Add chocolate and butter to the pot and leave to melt on low heat.
  4. Separate the eggs and whisk the egg whites with 2 tbsp. sugar until they form peaks.
  5. Mix egg yolks and the rest of the sugar and stir into the chocolate mix.
  6. Fold in the whisked egg whites and almonds.
  7. Fill the mix into ramekins and bake in mid-oven for 40 minutes.
  8. Leave to cool and dust with icing sugar.
