Healthy Pumpkin-Oat Bread

Ingredients (Number of Servings: 20)

 

400g Whole Grade Spelt Flour
65g Oat Flakes
2 tsp. Baking Soda
1 ½ tsp. Mixed Spice
½ tsp. Baking Powder
½ tsp. Salt
375g Pumpkin Puree
3 Eggs
340g Granulated Sugar
340g Demerara Sugar
250 ml Milk
125ml Organic Rapeseed Oil
225g Chopped Pecan Nuts

 

Preparation

    1. Beat eggs, pumpkin, sugars, milk and oil in a large mixer.
    2. Combine flour, oats, baking soda, mixed spice, baking powder and salt.
    3. Add the dry ingredients to the pumpkin mix until well combined.
    4. Stir in nuts.
    5. Spoon into a 2 lb loaf tin or 2 lb loaf tins.
    6. Bake in a preheated oven at 180º for 65 to 70 minutes or until wooden pick comes out clean.
    7. Cool in pan for 10 minutes, remove from tins and cool further on wire racks.
