Chocolate Banana Muffins


120g Dark Chocolate
60g Soft Butter
80g Raw Cane Sugar
Pinch of ground Nutmeg
1 Egg
1 very ripe Banana
100g Ballybrado Whole Grade Spelt Flour
1 Tsp. Baking Powder

You also need baking parchment, pink crep paper, and Sugar heart sweets to decorate.


  1. Preheat the oven to 160°C fan oven.
  2. Melt the chocolate in a bowl over hot water and leave to cool a little.
  3. Cream butter with half of the sugar and the ground nutmeg until light and fluffy.
  4. Separate the egg and stir the egg yolk into the butter and sugar.
  5. Peel the banana and squish it with a fork and stir it into the Butter mix along with the melted chocolate.
  6. Whisk the egg white until soft peeks form and then slowly add the rest of the sugar.
  7. Mix the flour and baking powder and then fold the whisked egg white and flour mix into the butter mix.
  8. Fill the dough into a muffin tray and bake in the middle of the oven for 20-25 minutes.
  9. Leave to cool
  10. Decorate with some melted chocolate and the sugar hearts. Cut ribbons from the crep paper and tie them around the muffins. Present in a pretty box or on a nice plate.
