Baking Course Session 2

Welcome back to session 2 of the online baking course. Soda Bread

There’s an ancient Irish proverb that says one should serve only “the newest of food and the oldest of drink”. When it comes to the newest food, you can’t beat freshly baked soda bread served with a knob of butter. As you all know it is a great Irish speciality.

A normal slice pan can contain up to 100 chemicals starting from the dressing of the seed, weed killers, fungicides, pre-harvest sprays, storage chemicals, bleaches and additives from milling and baking. To avoid all of these we suggest you bake your own breads using organic flour as this will give you peace of mind, all the goodness and all the taste.

You can be very creative with making your own bread by adding ingredients packed with specific health benefits to suit your diet. This is by far the easiest bread to bake.

Soda Bread

You can add any special ingredients you want to make it your own. These are just some ideas. You can use soya milk, water, ordinary milk or rice milk for this recipe except the Guinness one!


210g Ballybrado whole grade spelt flour
110g Ballybrado Coarse wheat flour
60g Ballybrado Standard oat flakes
7g Cream of tartar
7g bread soda
6g salt
400g Buttermilk



  • Preheat your oven to 200ºC (fan oven).
  • Put all dry ingredients in a mixing bowl.
  • Add buttermilk and stir vigorously until all dry ingredients are well mixed with the buttermilk.
  • Fill batter into a well greased 1lb bread tin.
  • Bake on the middle shelf for approx. 45 minutes.
  • Bread should sound hollow when you knock on the base.
  • Leave to cool on a wire rack. Enjoy with butter and soup etc.


All ingredients are the same for the variations, except liquid can be exchanged for Guinness and ordinary milk.

Soda Bread with Seeds

Extra ingredients: 30g sunflower seeds, 35g pumpkin seeds, 40g sesame seeds, 15g chia seeds. Use a little extra milk for this recipe. Health benefits of seeds are quite amazing. Check it out!

Guinness & Treacle Soda Bread

Extra ingredients: 100ml Guinness, 300ml milk, 55g treacle.

Herb Soda Bread

Extra ingredients: 3g dried coriander, 1.5g ground fennel, 1g ground aniseed.
